Definitely sweetness here, but still a little too much astringency.
I’m not sure finer is the fix here. I think a better solution will be a faster flow (2ml/s) and the coarser grind size to hit that at 7 bars max (although 6 might be ideal tbqh).
Cut pre-infusion at first-drop but expect it to still last a tad under 10 seconds.
